This is an amazing study! My anecdotal experience suggests that there is a much great loss rate in restaurants and the like, and a much lower loss rate in motels. I suspect work wouldn't lete access the sales data to confirm, though!
As a one-time restaurateur I can confirm that teaspoons commonly go for a walk (and more, we apprehended a customer with a hand-thrown teapot in her bag), but an astonishing amount of cutlery used to just end up in the bins in the frantic kitchen
